We are currently seeking a dynamic and experienced Stewarding Supervisor to become a member of our vibrant team and assist in the smooth operation of the culinary and F&B divisions.
Key Responsibilities
Daily Operations
Oversee stewarding functions such as dishwashing, sanitation, waste disposal, and back-of-house cleanliness.
Coordinate with the Purchasing team to ensure timely ordering of materials and equipment.
Track and audit purchasing transactions for Culinary and F&B departments to ensure compatibility with forecasts and operating demands.
Keep accurate operating supplies and equipment (OS&E) inventory levels; institute stock control procedures.
Check storage areas, kitchens, and utility areas for cleanliness and operability.
Organize and coordinate hotel transportation logistics for Culinary and F&B operations (e.g., van, truck utilization).
Comply with hygiene, sanitation, and health & safety rules in accordance with hotel policy and local laws.
Monitor par stocks for cleaning chemicals and equipment; ensure safe handling and storage.
Manage labor expenses by best utilizing staff according to business volumes; reduce dependency on casual labor.
Employ, train, and manage a highly performing stewarding team in accordance with the hotel values and operational philosophy.
Implement frequent training sessions to upgrade skills, advance safety awareness, and maintain compliance with hygiene standards.
Encourage members, foster positive work culture, and facilitate teamwork between stewarding and culinary staff.
Schedule teams and allocate duties according to workload and operational need.
Provide regular performance assessments and deliver coaching, feedback, and developmental or promotion recommendations.
Hold team briefing and attend inter-departmental meetings to achieve alignment and cooperation.
Cross-Functional Collaboration
- Ensure that day-to-day coordination with the Chefs’ Office, F&B Service Team, Engineering, Finance, Talent & Culture, and Security is smooth.
- Be a key liaison for external contractors and suppliers, and the relevant local authorities when necessary.
- Work with the Hygiene Officer and Executive Chef to ensure and promote HACCP and food safety compliance.
- Assist culinary events, banquets, and large-scale functions by matching stewarding support to event requirements.
- Main Complexity / Critical Challenges
- Capacity to respond quickly to operational change or unforeseen demands (e.g., major banquets, special events).
- Multitasking and handling multiple priorities under pressure.
- Maintaining consistent standards of hygiene and cleanliness in a fast-changing, high-volume setting.
- Adapting to developing trends, technologies, and industry best practices.
Qualifications & Experience
Education
Minimum of GCE “O” Level or equivalent qualification.
Experience
- 8–10 years stewarding experience in luxury hotel or resort settings, including large-scale banquet operations (1,000+ guests).
- Successful experience in handling stores, inventories, and procurement processes effectively.
- Multicultural and multilingual work environment experience.
- Technical Competencies
- Fluent English (spoken and written) language; Arabic or other languages are an asset.
- Skilled in Microsoft Outlook and Office Suite (Excel, Word, PowerPoint).
- Knowledge of hotel procurement systems, stock management software, and HACCP regulations.
